Show Us Your Life - Favorite Appetizer Recipe

This week, I am linking up with Kelly from Kelly's Korner and sharing my favorite appetizer recipe.  A co-worker shared this recipe with me and I love it!  It is great served with tortilla chips or corn chips.

Black Bean Salsa


Ingredients:

Bean Mixture:

2 cans black beans, drained

1 can niblet corn

1 small red onion, chopped

1 bunch cilantro leaves, chopped

1 red pepper, chopped

1 yellow pepper, chopped

3 Jalapeno peppers, chopped (optional)

Dressing:

1 clove garlic, crushed

juice of 1 lime

equal amount of olive oil

½ tsp. cumin

½ tsp. cayenne

1 tsp. salt


Directions:

• Combine beans, corn, red onion, cilantro leaves, and peppers in bowl.

• Mix together garlic, lime juice, olive oil, cumin, cayenne, and salt. Pour over bean mixture.

• Refrigerate overnight before serving.

Show Us Your Life - Favorite Dessert Recipe

Once again, I am linking up with Kelly from Kelly's Korner and sharing another favorite recipe.  This week we are sharing our favorite desserts!  I just LOVE anything sweet and I cannot wait to try some new dessert recipes!

Chocolate Chip Pound Cake has quickly become my favorite dessert!  If you like chocolate, then you will LOVE this cake!  Even though you use a cake mix, the cake still has a homemade taste to it.  I am NOT a fan of sour cream, but it definitely makes this cake super moist!

Chocolate Chip Pound Cake


Ingredients:

1 box cake mix with pudding in the mix (yellow but chocolate is preferred)

1 small box (¾ oz.) instant chocolate pudding

½ cup sugar (3 ½ oz.)

¾ cup oil

¾ cup water

4 large eggs

1 8 oz. container sour cream

1 cup (6 oz.) miniature chocolate chips, semi sweet


Directions:

• Mix cake mix, pudding mix, and sugar together to eliminate lumps in mixing bowl.

• Add remaining ingredients except chocolate chips.

• Mix well with electric mixer.

• Fold in chocolate chips.

• Bake in greased and floured bundt tube pan.

• Bake 350° for 1 hour.

• Test for doneness.

• May need to bake longer depending on oven.

• Turn out and dust with sifted powdered sugar.

Show Us Your Life - Favorite Main Course Recipe

I am linking up with Kelly from Kelly's Korner and sharing my favorite main course recipe.  I picked up this recipe from a display at Food Lion.  It is a quick and easy dinner to make on a weeknight.  My family loves it, and hopefully yours will too!

Crunchy Onion Chicken and Noodle Dinner


Ingredients:

1 (10.75 oz.) can cream of chicken soup

1 ¼ cups milk

2 cups French Fried Onions

1 cup frozen vegetables of your choice

2 cups cubed cooked chicken

2 cups curly egg noodles, cooked and drained


Directions:

• Stir soup, milk, 1 cup French Fried Onions, vegetables, chicken, and noodles in a 2 quart baking dish.

• Bake at 400° for 30 minutes, or until hot. Stir.

• Top with 1 cup French Fried Onions.

• Bake an additional 5 minutes, until onions are golden.
